I love chocolate desserts but they can be so heavy and unhealthy! After splurging and making eggless Chocolate Pots de Creme, I was in love with the silky smoothness of this dessert. But not so in love with the 390 calories and 31g of carbs in each serving of it! It motivated me to play with the ingredients and make a healthier variation of this classic French dish. After a few rounds of playing with it, this is my favorite variation. It turns out silky smooth and thankfully less heavy as traditional Pots de Creme! It is also an easy recipe to add fresh fruit into!
Coconut Chocolate Pots de Crème
- 2 oz Dark Chocolate
- 1/2 cup Coconut Milk, the canned type
- 1 tsp Sugar
- 1/2 tsp Vanilla
- Smidgen of Salt for topping
- 2 ramekin’s
Step 1) Break the chocolate up into smaller chunks and place them in a heatproof bowl.
Step 2) In a liquid microwave-safe measuring cup measure out your Coconut Milk (the canned type so you get some of the cream), sugar, and vanilla. Heat at 1-minute intervals till hot, stirring in between intervals.
Step 3) Pour the heated mixture over the chocolate and let sit for a minute. Whisk the chocolate and milk together with a fork to fully incorporate the chocolate into the milk. Once mixed divide into the ramekins and if desired top with fresh fruit like Passionfruit or Raspberries. Chill for at least an hour to let it fully set. Just before enjoying sprinkly with a little salt.
