I’ve always loved German pancakes! My grandmother made them for my cousins and me when we visited and it’s stuck as a happy food. The only downside is how long it takes to bake in the oven. I have found a successful way around that though, with the microwave! The process is identical to my original German Pancake in the Microwave, but these Almond Flour German Pancakes are amazing! They make for a quick and protein-rich start to the day! They also go great with hot coffee.. a must in the morning!
Took make this recipe Keto-friendly, I used Almond Flour instead of All-purpose Flour in my recipe. The Almond flour substituted perfectly in 1:1 ratio in this recipe and the German Pancake turned out amazing!
Almond Flour German Pancake- Microwave Edition
Equipment
- Microwave Safe Container
- Small Mixing Bowl
- Whisk
Ingredients
- 1 egg
- 1/4 cup almond flour
- 1/4 cup milk
- 1 tbsp Butter
- Fresh Berries or Lemon Juice and Powdered Sugar
Instructions
- In a separate bowl whisk together your egg, almond flour, and milk till combined and fairly smooth; don’t over stir it.
- In your microwave-safe bowl, melt the butter on high for about 15 seconds. Slowly swirl the melted butter around the bowl before adding in the batter.
- Add batter to bowl and microwave on high for about 2.5 minutes to 3 minutes; times will vary depending on microwaves. You want it to rise up and be cooked but not dry in the center. Top with lemon juice and powdered sugar, or your favorite fresh berries!
In all, this Almond Flour German Pancake is a quick, Low Carb (4.1 net carbs!), protein-rich breakfast, or any time snack/meal!
