Coconut Oatmeal!

I love coconut! Fresh coconut or dried coconut pieces are all yummy! It also helps that coconut is healthy, in moderation of course!, so why not mix it into fresh oatmeal and make breakfast with it? Why not indeed!

When I decided to try to make Coconut Oatmeal I looked in my cupboards and found Coconut Butter, Coconut Oil, Coconut Flakes, chia seeds, and flax seeds. Lots of options for sure! Unfortunately, though these are also high-calorie things so you have to make sure to use them in small amounts! So I settled a few of the healthier ones to help make it through the day without snacking. 

Coconut Oatmeal!!

  • 1/2 cup (measured dry) Old Fashioned Oats
  • 2/3 tablespoon Coconut Butter
  • 1 tablespoon Unsweetened Coconut Flakes
  • 1 tablespoon Whole Flaxseed

Step 1) Cook oatmeal according to directions. I cooked mine on the stovetop and with water to keep the calories down.

Step 2) While oatmeal is cooking add the coconut butter, coconut flakes, and flaxseed to your bowl. You can always add these to another bowl for mixing in, but that’s an extra dish to do later to just wait and add them when your oatmeal is ready. 

Step 3) When oatmeal is done cooking add it to your bowl with the toppings. Mix it all together to evenly distribute the yummies. The mixing is important because the Coconut Butter won’t soften properly without mixing. Enjoy your breakfast!

Note: The ratios in this recipe resulted in ~312 calories and 25g of Carbs. This highlights the need to pay attention to your quantity of toppings as they add up quickly!
