Maple Sausage Veggies and French Omelet

I was on the second or so cup of coffee that morning and starting at the fridge ingredients. It was just one of those Monday mornings! Love had been talking about fried rice topped with an amazing egg that when sliced open just unfolds, and he even found a video of it. Anyway, it was stuck in my head but just eggs isn’t a great breakfast alone for us. A few more sips of coffee and an idea formed. Veggies with maple sausage and a French Omelet egg.. yep breakfast had a plan! A few google searches and a video or two later and I was ready to try my hand at making a French Omelet. But first the maple sausage and veggies needed to be cut up. 

Maple Sausage Veggies and French Omelet

  • Half a medium carrot, diced
  • Hand full of mushrooms, diced 
  • Half a celery, diced
  • 4 or so maple sausage links, cut into bite size pieces
  • 4 eggs
  • 2 tbsp. cream
  • Butter
  • Sweet Drop peppers for topping

Step 1) Dice up all your veggies and sausage links. 

Step 2) Melt butter in pan over medium heat. Once melted add carrots and sauté till they start to soften. Once softened add maple sausage links and stir together. 

Step 3) Once the sausage has cooked most of the way through add the celery and mushrooms to the pan and continue cooking till everything is cooked through. Once everything is cooked through, place on plate. 

Step 4) Crack two eggs into bowl and add a tbsp, of cream and whisk together.

Step 6) Top maple sausage veggies with the French omelet. Top with a few Sweet Drop peppers, side of hot coffee, and toast. Enjoy!
