In a separate bowl whisk together your egg, almond flour, and milk till combined and fairly smooth; don’t over stir it.
In your microwave-safe bowl, melt the butter on high for about 15 seconds. Slowly swirl the melted butter around the bowl before adding in the batter.
Add batter to bowl and microwave on high for about 2.5 minutes to 3 minutes; times will vary depending on microwaves. You want it to rise up and be cooked but not dry in the center. Top with lemon juice and powdered sugar, or your favorite fresh berries!
